Cannabis Comfort Food: Medicated Mug Cakes

Summer’s coming and the weather is getting warmer. If you’re like me and you don’t want to heat up the kitchen, baking fresh edibles can be a real challenge. But I still love a warm and delicious medicated treat before bed. Microwave to the rescue!

I know some folks are purists and don’t like anything, especially their medicine, contaminated by a microwave. But for those who don’t mind, the ease and speed allows you to whip up a tasty tidbit in no time.

I like recipes that make individual servings. Mug cakes in the microwave are just the ticket. Here are three I’ve tested and particularly like. They’re all especially yummy topped with a little ice cream or whipped cream.

1 slice of day-old bread (whatever you have on hand is fine)
1 egg
1 tablespoon canna-butter (salted or unsalted)
1/3 cup milk
2 to 3 tablespoons sugar
Mix-ins of your choice

Tear the bread into small pieces. Place the bread pieces into a mug. Drop small chunks of canna-butter into the mug on top of the bread, along with any mix-in ingredients of your choice. Crack your egg into a small bowl. Add the sugar and beat well with a fork or small whisk. Add milk to the egg mixture and stir until combined. Pour the wet mixture over the bread pieces. Microwave for 2 minutes. If it still looks a bit runny, microwave again in 20-second increments (microwaves vary). Let cool a bit before eating.

Suggested mix-ins:
Nuts, banana, Nutella, applesauce, cinnamon, raisins or craisins, blueberries, peanut butter, jelly or preserves, mini chocolate chips

ChaiCakeInfused Coconut Vanilla Chai Mug Cake

The delicate flavor of coconut and chai spice in a little cake.

2 tbsp flour
1 1/2 tbsp sugar
1/4 tsp baking powder
1/8 tsp salt
2 tbsp milk
3/4 tbsp cannabis-infused coconut oil
1/4 tsp vanilla extract
1 chai tea bag

In a microwave safe measuring cup microwave the milk for 30 seconds. Place the tea bag in the warm milk to steep while you prepare the other ingredients. Mix the dry ingredients together. Give the tea bag a few dunks, squeeze and remove it from the milk. Add the rest of the ingredients to the milk. Lightly spray your mug with cooking spray. Pour cake mixture into mug. Microwave 1 minute 15 seconds. Sprinkle with a little cinnamon and enjoy!!

This one’s for my husband Greg, who we know loves chocolate (lots and lots of chocolate!).

1/4 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
2 tablespoons sugar
1/4 teaspoon baking powder
1/4 cup milk, at room temperature
2 tablespoons canna-butter, melted and cooled
1/4 teaspoon pure vanilla extract
1 tablespoon creamy peanut butter
1 tablespoon mini chocolate chips
Directions

In a small bowl, whisk together flour, cocoa powder, sugar, and baking powder until thoroughly, completely combined with no streaks of flour or cocoa powder remaining. Blend in milk, butter, and vanilla until batter is smooth. Pour batter into a 14-ounce (or larger) microwave-safe mug with straight sides.

Combine peanut butter and chocolate chips and dollop into the center of the mug, gently pressing down until even with the top of the batter. Microwave on high for 1 minute. Allow to cool for a couple of minutes before serving.
